Spinach “meat”balls

My husband isn’t a vegetarian so I do try to cater to his tastes, while still cooking vegetarian food that I can enjoy.  This is one of those types of meals; lovely vegetarian food with a manly feel to it, which is robust enough that he doesn’t miss the meat. These spinach “meat”balls are lovely served with a tomato suace and spaghetti.

Spinach balls

Spinach Balls (Serves 2)

1/2 tbsp olive oil
1 small onion, very finely chopped
1 clove of garlic, crushed
200g frozen spinach, thawed and drained
2 tsp vegetarian Worcestershire sauce (I use Henderson’s Relish)
50g breadcrumbs
25g vegetarian parmesan cheese

1. Preheat the oven to 180°C.

2. Heat the oil and gently fry the onion until soft and translucent.  Add the crushed garlic and heat gently.  Stir in the frozen spinach.

3. Add the Henderson’s relish, breadcrumbs, vegetarian parmesan cheese and season lightly.

4. Roll the mixture into balls, about the size of a walnut.  Bake in the oven for 10 minutes.

Delicious served with spaghetti and a tomato sauce.
